Ingredients
  

  • 2 cups broccoli florets
  • 1 large carrot thinly sliced
  • 1 cup mushrooms sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp vegetable oil for stir-frying

Instructions
 

  • Heat oil in a pan over medium-high heat.
  • Stir-fry carrots for 2 minutes, then add broccoli for 3 minutes.
  • Add mushrooms and cook for 2 more minutes.
  • Pour in sauce, mix well, and cook until thickened.
  • Serve hot with rice or noodles.

Notes

  • Prep ahead – Chop all ingredients and mix the sauce before starting.
  • Use high heat – Prevents soggy vegetables and adds a slight char.
  • Cook in the right order – Hard vegetables (carrots, broccoli) first, soft ones (mushrooms) last.
  • Don’t overcook – Keep veggies crisp and vibrant.
  • Use cornstarch slurry – Helps the sauce cling to vegetables for extra flavor.
