- 2 tablespoons vegetable oil or sesame oil
- 2 eggs beaten
- 1 small onion finely chopped
- 1 clove garlic minced
- ½ cup mixed vegetables peas, carrots, corn
- 2 green onions chopped
- 1 tablespoon soy sauce
- Salt and pepper to taste
Heat 1 tablespoon oil in a skillet, scramble eggs, then set aside
Add remaining oil, sauté onions and garlic until fragrant
Stir in mixed vegetables, cook until tender
Add cooked rice, breaking up clumps, and mix well
Return scrambled eggs to the pan, stir to combine
Pour in soy sauce, season with salt and pepper, stir-fry until heated through
Garnish with chopped green onions before serving
