- ½ cup fresh lemon juice
- 4 cloves garlic minced
- 1 teaspoon dried oregano
- 1 cup vegetable or chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika optional, for color
Preheat oven to 400°F (200°C).
Rinse and pat dry potato wedges.
In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
Toss potatoes in the marinade and place in a baking dish.
Pour broth over the potatoes and bake for 40 minutes, stirring halfway.
