Ingredients
  

For the Eggs:

  • 12 large eggs​

For the Pickling Brine:

  • 3 cups white vinegar​
  • 1 cup water​
  • 1 medium onion thinly sliced​
  • 2 cloves garlic peeled and crushed​
  • 2 tablespoons granulated sugar​
  • 1 tablespoon pickling spice​
  • 1 teaspoon salt​
  • 1 teaspoon turmeric optional, for color​
  • 1 teaspoon crushed red pepper flakes optional, for heat

Instructions
 

Prepare the Eggs:

  • Place the eggs in a saucepan and cover with water.​
  • Bring to a boil over medium heat. Once boiling, remove from heat, cover, and let sit for 10-12 minutes.​
  • Transfer the eggs to an ice bath to cool, then peel them.

Prepare the Pickling Brine:

  • In a medium saucepan, combine the white vinegar, water, sliced onion, crushed garlic, sugar, pickling spice, salt, turmeric, and crushed red pepper flakes.​
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.​
  • Remove from heat and allow the brine to cool slightly.

Assemble the Pickled Eggs:

  • Place the peeled eggs into a clean, sterilized quart-sized jar or a similar airtight container.​
  • Pour the warm pickling brine over the eggs, ensuring they are fully submerged.​
  • If necessary, place a clean weight or a folded cabbage leaf on top to keep the eggs submerged.

Pickling Process:

  • Seal the jar tightly and let it cool to room temperature.​
  • Once cooled, refrigerate the jar.​
  • Allow the eggs to pickle for at least 3-7 days before consuming; the longer they sit, the more pronounced the flavor.
