Ingredients

Graham Cracker Crust:

  • cups graham cracker crumbs
  • 6 tablespoons unsalted butter melted

Filling:

  • 1 8-ounce package cream cheese, softened
  • ½ cup granulated sugar
  • 2 cups heavy whipping cream
  • 3 tablespoons granulated sugar
  • ½ teaspoon vanilla extract
  • 1 21-ounce can cherry pie filling

Instructions

Prepare the Crust:

  • In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
  • Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer.
  • Set aside 2 tablespoons of the crumb mixture for topping.

Make the Filling:

  • In a large bowl, beat the softened cream cheese and ½ cup granulated sugar until smooth and creamy.
  • In a separate bowl, whip the heavy whipping cream, 3 tablespoons sugar, and vanilla extract until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined.

Assemble the Dessert:

  • Spread half of the cream cheese mixture evenly over the prepared crust.
  • Evenly spread the cherry pie filling over the cream cheese layer.
  • Top with the remaining cream cheese mixture, spreading it evenly.
  • Sprinkle the reserved graham cracker crumbs over the top as a garnish.

Chill and Serve:

  • Cover the dish and refrigerate for at least 2 hours, or overnight, to allow the dessert to set properly.
  • Once set, slice into squares and serve chilled.

Notes

  • Variations: Feel free to experiment with different pie fillings such as blueberry or strawberry for a change in flavor.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Crust Alternative: For added texture and flavor, consider adding ½ cup of finely chopped pecans to the graham cracker crust mixture.
